PS Seasoning and Spices Encapsulated Citric Acid is for use when making dry sausages. When added to sausage it tends to extend the shelf life and add a nice tangy flavor.

Use 8-10oz per 100lbs of meat. Add after last grinding of meat.

Comes in a 1lb bag.
