Old Fashion Country Bacon Rub
Country cured bacon is cured or preserved by the application of a dry mixture of salt, brown sugar and pepper to the surface of the meat. To anyone who is familiar with true old fashioned cured bacon, the resulting taste and flavor of this meat is delicious.
Formation of mold is a normal occurance with country cure meats and does not mean that the meat is spoiled. Simply wash the mold away with water.
Use 1oz per pound of belly.
Ingredients: Salt, Brown Sugar, Sugar, Less Than 2% Tricalcium Phosphate (prevents caking). Processed from Salt, Sodium Nitrite (6.25%), Red 40 Lake
